Assuming you are using the latest version of all the plugins and the themes (please update if not yet), it would seem like a conflict with one of the plugins or the theme you are using.

I’ll keep the Health Check plugin in mind if I run into any issues again, but for now I was able to resolve this the manual way.
Since Elementor doesn’t allow one to to edit the posts page after it has been designated as such, and since your plugin works directly within the Elementor framework, I had to delete the Posts page and recreate it.
After recreating it, and before designating it as the Posts page, I first went into Elementor and setup all the SEO via your integrated plugin.
Then I designated that page as my static Posts page. Now I see the SEO content and can easily edit from within the regular WP edit page function and don’t even need to go into Elementor to change settings.
So everything is working fine now.

The healthcheck plugin is always useful especially when there is a likely conflict with a plugin or the active theme.
