It’s not that, it works on some pages via Elementor and I don’t have to click Update to save changes, which implies manual update is not required.
However, when using the standard WordPress Edit function, and making changes, followed by clicking Update it saves fine.
I note that your ticket system does not allow for attachments, which should be addressed.

to clarify, under Elementor RM changes are not always saved, but they are under normal WordPress editing (right hand panel)
Using latest versions E:v3.1.4; WP 5.7.1

This is a known issue with Elementor that the Rank Math changes are not getting saved and the update button is grayed out. For a workaround, please edit some text in your content and revert back for the update button to be clickable. Here’s a screencast for your reference:
