Assuming you are using the latest version of all the plugins and the themes (please update if not yet), it would seem like a conflict with one of the plugins or the theme you are using.

I followed the troubleshooting guide, activated only Rank Math without any other plug-ins and changed to the twenty twenty one theme – the problem is still there (from the beginning), so it looks like a bug to me …
My editing possibilities end with Archive Descriptions on menus Categories, Tags and Table Tags. I see no possibility to enable Robots Meta, there is no button. But before I saved my changes, everything was there like you show in your screen capture.

I’ve checked your website, and it seems that your Rank Math is not set to Advanced Mode in Rank Math > Dashboard
I have already set it to Advanced Mode, so you can now edit the post category meta robots.

I’ve also checked on your website and tried changing the Categories and Tags Archives default robots meta to noindex and no snippet, but it seems that it’s still in the Advanced Mode.
Could you please also try again the steps on your end? If the issue persists, could you also provide the internet browser you are using for saving these settings?
