Rank Math only adds the review schema to your pages(visible on SERP) not the actual reviews and thus it is imperative that you keep using the review plugin so that your site visitors can see the reviews on your pages.
For this use case, you can disable review schema on the pages that already have reviews.

But, I noticed RankMath Plugin allowing us to display Editor Rating and the Snippet Headline and Description. We can add it either above the content or below the content to display for visitors.

This is correct and you can use this method to add editor ratings to your posts.
I can however recommend that you make use of WP review which is much more versatile in adding visitor & editor ratings while also integrating the review schema.
