This is resulting from the fact that Elementor renders shortcodes unlike the post editor (and also the WP Pages listing) that renders the actual content. These shortcodes affect the calculation of the score but this should not cause any worry since this will not affect your SEO.

So which score should i be using to tweak my SEO? Obviously people liek me use Rankmath to improve SEO on the website, but if I don’t know which score is correct, I might not be doing it correctly.

Since your content is added through Elementor, you can refer to the score on Elementor.
Please note that the score and the checks are just there for your reference, you don’t have to follow them religiously and the score doesn’t affect your Ranking.

Now I’m a bit lost, I thought the whole point of using a tool like rankmath or yoast was to improve your SEO and therefore google ranking?
So surely the better the score, the better you are likely to rank?
Have I got it all completely wrong?

Yes, it is true. But the reason we said they are just guidelines is because there are sometimes you don’t have to focus on them, there are always things you can test, you can change.
If there were just some steps to follow to always rank with guarantee, everyone would follow it and all the pages would be the first on Google (which sounds impossible).
That is why my colleague said they are just guidelines because you can follow them but if for some reason you don’t want/you can’t fulfill all of them/get the 100/100 score, probably won’t have a bad effect for you.
