Yes, you can set up those deleted pages as 410
using Rank Math Redirection after deleting them. Please head over to Rank Math > Redirection. If it’s not showing in your setup, head over to Rank Math > Dashboard and enable the Redirection module

Please note that some options are only available when you enable the Advanced Mode in Rank Math. If it’s not showing, you must have chosen to use the Easy Mode. Please follow the steps in this link to switch to Advanced Mode:

The “410 Content Deleted” should be used when the content in question has been deleted, and no suitable replacement is available. When search engines encounter a 410, they also de-index the page naturally. You can check this link for more information and how to create the 410 redirection:
