In order to use the default global meta values, you need to empty your title in the Snippet editor.
If you already do so and the issue persists, we might need to take a closer look at your admin settings. Please edit the first post on this ticket and include your WordPress & FTP logins in the designated Sensitive Data section.
It is completely secure and only our support staff has access to that section. If you want, you can use the below plugin to generate a temporary login URL to your website and share that with us instead:

I am not sure what you mean by that or if you have the impression that I am filling it in on the draft post?
I am not, the image you are seeing is what a brand new post is generating before I fill in anything.
So the default title after “|” is now working again but I still get random fills of metadata from published posts instead of the default fill.
This happens all the time, in fact for months but every time I request a solution I never get one here and end up just moving on.
Can we solve this once and for all?

Assuming you are using the latest version of all the plugins and the themes (please update if not yet), it would seem like a conflict with one of the plugins or the theme you are using.
To determine that, please follow this troubleshooting guide:

Only the site admin would know and your users won’t be affected by this troubleshooting.
Please try activating only Rank Math and a default theme during troubleshooting mode and see if the issue persists.
If so, we may need to further investigate your website and include your WordPress & FTP logins in the designated Sensitive Data section as instructed above.

It may be occurring on your site due to a conflict which is why my colleague suggested you check this using the troubleshooting guide.
