You can reduce the crawl depth of your pages by increasing internal linking on your site. For the page in question, you can add an internal link to it from the homepage and this will reduce its crawl depth to 2.

Yes, the crawl depth of the actual project page is 3:
https://brighton-website-design.co.uk/project/brighton-legal/
However, itβs also appearing in a crawl showing in a category on page 2 (hence also showing as a crawl depth of 6).
Is there a way of changing the meta settings so posts/pages/projects arenβt being crawled under their category listing?

As you mentioned, the page/2
is already set to noindex
.
So, Google will not index that page and hence the error you mentioned in your crawl report is a false positive.
