The opening hours entity is usually added to Local Business schema or civic structure. If you are not using either of this, you can choose to leave the fields just as they are. If you do haven any one of those schema you can use the filter to modify rich snipetts and assign the openingHours value to be mon-sun. For reference, here is a link: https://schema.org/openingHours
