Documentation where I read this didn’t indicate ignoring the 600 word check for products was a pro feature. It clearly states that Rank Math would exclude “any product pages from this test”.

Apologies for the confusion.
The exclusion you’re referring to is with the Rank Math PRO. In the free version, the test stays the same count, but you can safely ignore it for product pages.
Please note that these tests are only there for your reference to help you in optimizing your pages/post content. If you feel any of them doesn’t apply to your page, please feel free to ignore them.
If you want to completely disable that test on your products, then you can use this filter on your site:
