The global settings are usually taken as the defaults when creating new posts. When you have the schema modified in Rank math > Titles and Meta > Posts/Pages, this will always be the default setting when you create a new page/post. This is useful in a case where you don’t wish to have to modify the schema for each page you create.
You can however change this at individual page level without any problem. Changing it will not cause any issue or conflict for your post schema.
You can also set it to none and modify the add the schema for each post as you create it.

Q so much for the reply and information. So would you say it better by default to set all the pages and posts to use the article scheme?

If you consider your pages to be articles, then nit is very much okay to set the schema as so. The about us and contact us pages usually don’t contain much content to make them schema-fit and you can set the schema to none for those.
