1. If I upgrade to the business plan will my client-sites be able to maintain their individual RM-accounts (which is connected with their individual Google-accounts)?
You will have to use the same account to activate the license on all 100 websites, and there are no sub-accounts involved, but your clients can connect their respective Google account.
2. And what will happen with their RM-settings if I need to hand over a website to a client and they dont want to buy their own license?
If the user wishes to use a free account later, all the PRO functionality will be disabled. Although it will be saved on the database, later user can buy the license and bring back the settings.

but I cant seem to find where to change from the clients RankMath-account to mine?

Please navigate to WP Dashboard > Rank Math > Dashboard > Help on your client’s website and connect your Rank Math account. It will activate all the PRO features once the account is connected successfully.
