Upon further checking, it seems that you have added a custom canonical URL to your category pages, that’s why they are not showing in the sitemap. I’ve attached a screencast in the sensitive data section on how to resolve this issue.
Please note that Rank Math automatically generates the canonical URL for all your pages if they are set to index. The main purpose of adding a custom canonical to your pages is to let Google know that it is a duplicate page, and not to be indexed.
If you also set the canonical manually, your posts/pages will not be included in your sitemap. Here’s a link for more information:

I’m glad it solved the problem but I didn’t add custom canonical url to the categories. I think it was a bug. I’ve been using it for a long time without any problems, I’m doing the updates right away, there may be any bugs.
