I checked your sitemap and it’s working fine. Can you please share a screenshot of the errors that you are getting for your category sitemap? You can use https://imgbb.com/ to share the screenshots.
Meanwhile, please follow these steps:
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:

Then remove all previously submitted sitemaps from your GSC account and resubmit your main sitemap(sitemap_index.xml) and wait for Google to crawl it.

Upon checking your categories I noticed they do have an odd date on the yearly format as you can see in this screenshot: https://i.rankmath.com/yHfjUM
This is the reason why there are errors on your search console. I have gone ahead to try to troubleshoot this issue but the health check does not seem to work.
Your theme as well can not be changed as it is most likely possibly causing the issue here as they are known to manipulate the dates in various content.
I would recommend that you troubleshoot all your plugins one by one and also the theme you are using. While doing so please ensure you flush the sitemap to get updates upon a change.
Also for us to further check this issue you need to grant us permission to install the default theme and troubleshoot your plugin.

Hi, I did what you suggested me. It was a plugin…i delayed it. it seems that all the dates are now correct….but I still have the same mistakes…. Any further ideas?

I’ve checked your category sitemap, and it seems that the dates are already correct.
In this case, please remove all your submitted sitemaps and resubmit your main sitemap only /sitemap_index.xml.
Then give Google some time to recrawl your whole site.
