If yes, please follow the below steps:
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:

3. Clear your website and browser’s cache and see if that fixes the issue.

Dumb question but where do I see if categories are set to index?
Also, for seo should they be?

You can check the global settings under your WordPress admin area > Rank Math > Titles & Meta > Categories > Category Archives Robots Meta.
To check the robots meta settings for individual categories, you can edit the category and check the robots meta settings from the Advanced tab of the SEO Meta Box.
