Just to be sure, have you some posts added to those categories? Since as you can see in your first screenshot, Rank Math has disabled the option to include empty categories in the sitemaps, so if there are no posts of none of the categories, no categories sitemap will be created.

Yes, there are posts available in some categories but it’s not creating the sitemap at all for the categories and google is fetching posts without categories as you can see in the screenshots.
What you suggest should I enable the empty categories option to get the category sitemap?

I checked your site and you had set categories to noindex in Rank math > Titles & Meta > Categories under robots meta.
I set this to index, added your sitemap URLs to be excluded from caching(WP Rocket settings > Advanced Rules) and cleared your cache which seems to have fixed your issue.

Thank you for the follow up.
Global settings in Rank math > Titles & Meta > Posts/Pages don’t affect already existing posts/pages. Setting the categories to index/noindex globally in Rank math will affect only the categories you create under WordPress Dashboard > Posts > Categories.
You can still set them to noindex individually using Rank math metabox in the advanced tab.
By default the category sitemap only includes the categories that are assigned to post(s). If you want to also include unassigned categories, please enable the option to include empty terms in Rank math > Sitemap settings >
