I’ve checked your category pages, and they are set to noindex.
Please note that pages that are set to noindex are not getting included in your sitemap as we have explained here:
https://rankmath.com/kb/url-not-in-sitemap/#noindex
Once you have set them to index, the sitemap should be created automatically and include your category pages.
