I have been checking your site and I was able to root your issue with 404 on AMP categories to the strip category base. The AMP settings seem to be be generated to category URLs with only with the category base. For example the URL https://yourdomain.com/gesundheit/ has its amp version at https://yourdomain.com/category/gesundheit/amp/ instead of https://yourdomain.com/gesundheit/amp/
I tried to enable the option to remove category base in your Amp > Settings > Advanced but it doesn’t seem to have any effect. Could you please get in touch with the AMP support to check on this. Let us know how this goes.
As for your redirections, you can use http://redirectcheck.com/ to trace your redirection.
