Thanks for getting back to us and sorry for the delayed response.
There’s a conflict between our plugin and the theme you are using regarding the addition of the category field editor. To fix this issue I disabled the addition of this editor from Rank Math and you can now edit your categories successfully.
In order to achieve this I changed line 62 of the following file wp-content/plugins/seo-by-rank-math/includes/admin/metabox/class-taxonomy-screen.php
like so:
//$this->description_field_editor();
This comments out this call to the custom editor and allows your theme to correctly output their implementation.
Please note that as soon as you update the plugin this change will be reverted and you’ll need to apply it again on your websites.
I will also report these changes to the dev team and they will investigate if there’s anything we can do from our end to fix the issue on subsequent updates of the plugin.
For now, this should help you edit your categories without any issues.

To fix the issue on your other website you only need to follow the steps I illustrated in my previous reply to edit the file and comment out the call to our custom description field editor.
