This issue seems to be caused by a rule in your .htaccess file that adds a slash to your URLs because the route used to update the metadata is being redirected to one which adds the slash but not at the end as it should be.
Could you please try a default .htaccess file temporarily to see if the issue is fixed?

Good point. I have removed the code lines you mentioned and I CAN save the meta tags now, but the issue now is that the URLs are without the slash at the end. So, basically, 2 URLs works for one page. The one with slash and the one without. I know I can fix this with canonical URL settings, but in the end, this is still a technical error on WP which I don’t want our website to have.
Any suggestions?

You could add an exclude for the wp-json path just before/above the htaccess rewrite condition and rule to add a trailing slash.
The following code, or something similar should work:
RewriteRule ^wp-json($|/) - [L]
