A category (or any sitemap for that matter) in Rank Math is created when it meets to conditions:
1. You have enabled the sitemap at WordPress Dashboard > Rank Math > Sitemap Settings
and
2. You have at least one category that is indexable and contains a post that is indexable.
All good on 1, I suppose which brings us to 2. You have categories and each one has at least one post but it looks like your categories are set to noindex. Since you do not want Google to crawl your category archives (accidentally or otherwise), it makes no sense to include them in the sitemap.
If you wish to change that, please head over to WordPress Dashboard > Rank Math > Titles & Meta > Categories
Then, make sure you haven’t checked the “noindex” option in the robots section.
If you have, please uncheck it, clear your website cache and reload the sitemap index. It should show the category sitemap correctly.
