I can check that the canonical is set as the URL of your category. If you have correctly saved the canonical URL in the Advanced tab of the meta box then please try clearing the cache of your site. If the issue persists even after that then we might need to take a closer look at the settings. Please edit the first post on this ticket and include your WordPress logins in the designated Sensitive Data section.
Please do take a complete backup of your website before sharing the information with us.

The product category canonical feature is working on my setup, there may be a conflict between Rank Math and your theme or a plugin on your setup preventing the update of canonicals. To determine this you will need to follow the procedure here: https://rankmath.com/kb/check-plugin-conflicts/
Alternatively, you can install the Health Check plugin and we can carry out the troubleshooting for you. Once we have determine what might be causing a conflict, we’ll be able to recommend a solution.

Thank you so much for your suggestion. The troubleshooting plugin helped me find the issue. It was due to a setting in the plugin that I use for filtering (BeRocket). There was a setting that would enable it to overwrite the canonical to be self referential whenever there was a filter on a page.
