The meta seems to update on troubleshooting mode with Rank math & your theme active and keeps the same even after disabling the troubleshooting mode.
It is likely one of your plugins is affecting this setting, if it occurs again you may have to switch to a default theme and disable your plugins then enable them one by one to find which one is causing the issue.
