Cannot change the og:title

Could you please share the affected URL so we can check as well?

Meanwhile, if you have set a different title in the social media tab, then it will be used in the og:title tag instead of the value you have entered in Titles & Meta settings:
https://rankmath.com/kb/meta-box-social-tab/#title

If so, then you may need to remove the title there to generate the default title you have set.
