In this case, assuming you are using the latest version of all the plugins and the themes (please update if not yet), it would seem like a conflict with one of the plugins or the theme you are using.
To determine that, please follow this troubleshooting guide:

Only the site admin would know and your users won’t be affected by this troubleshooting.
If the issue persists, please edit the first post on this ticket and include your WordPress & FTP logins in the designated Sensitive Data section.

After inspecting your website we noticed that you tried translating this option in your string translations and changed some of the order there which was causing this issue.
You should not mess with that order as that can cause some issues and conflicts.
After resetting this to the default order and adding the translations again for all the languages you can edit the link correctly as well as see that everything is correct on the frontend.
Having said that, there’s currently a mismatch between the default language of your website and the default language of WordPress.
Your installation is in English and the default language is German, that’s why it seems that the breadcrumbs homepage link is for the English version instead of the German version.
So please be aware of that situation when changing URLs to any language-specific feature in your settings.

This must have something to do with WPML somehow.
Yes, the default language in WPML is German but my admin user is English.
According to statements from WPML this setup should not cause any troubles.
When I change URLs for any language-specific feature WPML should handle it – shouldn’t they?
I assume that i am not the only one who creates post in his mother tongue, while WP backend is English.

This setup is indeed not causing any issues with the functionality, but it renders the values incorrectly on the settings screen.
However, as I mentioned, after fixing the mismatch it seems that the values can be changed again, so I would agree with you that this is likely an issue with how WPML is handling the string translations here.
Since I assume that you want to continue using this language set up I can only recommend that you keep a note of what I mentioned when changing the URLs for any setting on the plugin.

you are right, I was able to change the bradcrumb home URL in backend.
But now I have the problem (again) that the Home link for English pages is wrong – since it is the same as for German pages.
This is why i made changes in string translations the first time to fix this issue. And again, this is a WPML issue and not a user-made problem.
Please let me know how I should proceed.
Sidenote: The home link for French posts/pages is correct!

Thanks for getting back to us.
Since the string translations are having issues with this setting I would recommend that you do the changes in the WPML plugin directly like you were doing before.
Any changes you make on that setting will still take effect, but unfortunately, the frontend won’t update correctly for the Rank Math settings because of that mismatch I mentioned in a previous reply.

thank you – I did as you said. Now the “Home” on frontend is working correctly again (while the link in the backend is wrong and not changeable I assume). But that is okay for me. I had to change the default language of the string. Please see screenshot:
