    It’s just that the & should not be escaped

    That shouldn’t be an issue, as Google’s Rich Result Test should still be able to accept that as a valid structure.

    However, we would like to check this further in your setup and investigate further, as it should return an escaped character. Please edit the first post on this ticket and include your WordPress login in the designated Sensitive Data section.
