I was able to replicate the issue, allow me to consult on this.
For now, the schema is saved if you head to Rank math meta box and under the schema tab, edit and save schema for the post, please check the screencast I have added in the sensitive section.

Thank, but have to save again all old post. Not a good option if the website has many posts.
