To change the Home label in breadcrumb in polylang plugin please navigate to WP Dashboard > Languages > Translations, in that search “breadcrumbs_home_label”. Change the text in English translation field.

Yes, the shortcode should work. If the changes aren’t reflected on the front end, please try clearing your website cache and check again.
