1. That option can be used if you wish to define a custom title for the current post/page/CPT in the breadcrumbs.
For example, if your post title is post 1 and you write post 2 in the breadcrumb title field, then in the breadcrumbs of post 1, post 2 will be shown.
2. Google usually shows the breadcrumbs structure it finds on the page. You can modify the structure of the breadcrumbs as per your requirement and then wait for Google to crawl the website again and see if the breadcrumbs update on the SERPs.
3. You should not disable breadcrumbs as it makes it easy for visitors to navigate your website.
Enabling breadcrumbs – especially for eCommerce stores – has enormous benefits such as good user experience, reduces the bounce rate, helps the search engines to crawl the website easily, ultimately improving the rankings.

Okay so I should keep the breadcrumbs enabled but this is my main issue:

Google tend to hide the URLs for the breadcrumbs. You can learn more about here Although It would not affect your SEO in any manner at all. I would suggest you to stick with the breadcrumbs since it provide better site navigation. Although, If it’s not fits in your SEO strategy. You can change it according to your needs.
