I am afraid that WooCommerce only allows the product schema since the product attributes are extracted from the product data. You can however set the rich snippet to none via Rank Math > Titles & Meta > Product and then generate your very own custom schema data.

Unfortunately I am not so technically prepared to do si unless you conduct me step by step. I choose your plugin mainly because of this feature and for the easy way to do it.
Where are the Schema data managed? How can we change them? It would be very useful also for other things.

Thanks for getting back to us.
Some of the important properties of the product schema is the product price, offers and product is in stock. These properties are not available in the books schema which is best suited for a library site.
We may not be in a position to create the custom code required to integrate the schema type to your store but I can suggest that you reach out to a freelancer so that they can customize the population of the schema data on your site header for all the book posts.

The Books rich snippet is best suited for reviewing books since it will offer more information about the book on the SERP entry to help the end users when searching for a certain book.
