Rank Math and Elementor are fully compatible and Rank Math should be able to read the data from the fields.

Assuming you are using the latest version of all the plugins and the themes (please update if not yet), it would seem like a conflict with one of the plugins or the theme you are using.

It’s normal to see different scores because you are using Elementor to edit the pages and our plugin read all the content successfully when in the Elementor editor, however, when you open the same page in the WordPress editor the plugin can’t read the content precisely as is written inside Elementor due to the use of shortcodes.

This is the expected behavior when you use a page builder such as Elementor or Divi and the main reason we offer the integration for those.

I checked and wasn’t able to replicate the issue with the image alt text. I added your focus keyword as ALT text to one of the images in your post and Rank Math was able to recognize the changes and updated the score accordingly.
