Your product sitemap seems to be loading fine now. You can manage your sitemap links in Rank Math > Sitemap Settings > Links per sitemap.
Also, Google recommends splitting large sitemaps into multiple small sitemaps then putting them in the main sitemap. As we know small-sized pages load faster than large pages. If your sitemap size is too large then it will take time to crawl in respect to the small-sized sitemap. Actually, this is from our tested result and that’s why we recommend between 200 and 500 links per sitemap.

Have you tried adjusting the “Links Per Sitemap” option as suggested by my colleague? This option allows you to control how many URLs each sitemap displays and splits them into multiple sitemap files.

The filter that you added on your website to add the additional content bypasses the number of links per sitemap and adds the URLs to the first available sitemap from that CPT that it can find.
That’s why you see the first sitemap not respecting the numbers.

The filter adds the URLs after the sitemap has been generated and that’s why it will not respect the limit that you have set for links per sitemap option.
However, since your sitemap is working fine, the links per sitemap will not affect the indexing of the URLs.

Yes, we recommend using 200 to 500 links per sitemap but links per sitemap apply only on the initial sitemap load and the filter is triggered after that so there is no way to reduce the links in your first product sitemap.
However, as long as the sitemap is loading fine, Google will be able to crawl the URLs in your sitemap.
