Sorry, OP, no answer, just piggybacking here as I am having a very similar issue (new site, new GA and GSC account). I followed the recommended video for the plugin setup, but looking in the dashboard settings for RM, I do not see Search Console. When I click on RM’s General Settings > Analytics, it shows a green light to the left of Search Engine, but the Analytics does not reflect being connected, as the Select Account, Property, View, and Country are not pointing to the specific account. I should add that when I created the Google Analytics account, they’ve apparently changed things a bit as “View” is not an option.
I don’t know if the issues I’m having are somehow related to:
A. the GA account not having a View,
B. the site being new/not yet public and thus no searches yet to report,
C. the settings within my iThemes account, and/or
D. something totally different.

Just to be sure, could you check if you are using Google Analytics 4?
GA4 is relatively a new product and is in Beta, & there could be data discrepancies if we were to integrate them into Rank Math. And the fact that their APIs are not yet fully ready for 3rd party integration, there is not much we can do.
However, we will begin working on the integration as soon as they improve their V4 API.
In the meantime, you can enable GA v3 by following this:

The only thing your visuals left a bit unclear is the last image, as it appeared you were saying we needed to turn *off* instead of turn on the “Create a Universal Analytics property” button. (And, of course, we also need to provide the appropriate information for the property name, time zone, etc.)

That works fine indeed but needs to reconnect to GA.
Furthermore I’m getting a bunch of errors in my server’s log every time I check the Analytics menu. I have attached them in the “sensitive data” section.

Please follow these steps to recreate missing tables:
1. Update to the latest version of Rank Math Free & PRO
2. Ensure that the Advanced Mode is selected:
3. Re-create tables by clicking WP Dashboard > Rank Math > Status & Tools > Database Tools and click the Re-create database Table
button.
