You cannot add the default text only for new posts while leaving the others intact on the website.
If you change the global settings for the posts under WordPress Dashboard > Rank Math > Titles & Meta > Posts it will apply to all posts that don’t have a custom title added to them.

If you want to use a different SEO title for different categories, please navigate to WP Dashboard > Rank Math > Titles & Meta > Categories and enable the Add SEO Controls option.
