As you’ve already did the 301 redirection which is the best move. So, the traffic will actually land up in the page. Now, as you’ve changed the slug, sitemap that’s generated by the Rank Math will also update. Please update the sitemap in GSC as well.
If the sitemap doesn’t get updated then please follow the steps mentioned in this article: https://rankmath.com/kb/fix-sitemap-issues/

Yes, you can resubmit your sitemap to your GSC. Remove the sitemaps from the Sitemap section and resubmit only the primary one (https://YOURWEBSITE.COM/sitemap_index.xml)
