This is very odd, it is also possible to manually update the plugin by downloading the source files from https://wordpress.org/plugins/seo-by-rank-math/ and unzipping the folder to replace the current Rank Math folder in your wp-content/plugins folder.

If you have this option enabled, please make use of this plugin: https://wordpress.org/plugins/wp-rollback/ to rollback to 1.0.26 of the plugin.

This issue suggests that your wp-content/plugins directory has some inconsistent file permissions. Please change the read and write permissions to 755 to fix this.
After modifying the permissions, you will need to delete the Rank Math folder and perform a clean install.
PS: No data loss should be experienced in this process.
