There are cases in which other user roles are not able to save the changes.

You can run this link using the Shop Manager user as it shows a WordFence block:

https://www.agrigima.100botteghe.it/wp-json/rankmath/v1/updateMeta

In this case, you may need to whitelist the IP by following this guide:

Hello,

To whitelist the Rank Math REST Routes, you’ll have to change the Web Application Firewall Status to Learning Mode.

If the “Automatically enable on” option is checked, WordFence will automatically change the Firewall Status to “Enabled and Protecting” mode which is recommended.

But you can also manually change this status after whitelisting the Rank Math REST Routes.
