Rank math should automatically populate an excerpt of your post content if no description is added in the meta description field. If you are using Rank math excerpt, you can try changing your post content the n check your URL with this tool: https://www.heymeta.com/
If it is not updating, assuming you are using the latest version of all the plugins and the themes (please update if not yet), it would seem like a conflict with one of the plugins or the theme you are using.
To determine that, please follow this troubleshooting guide:

I see the default WP excerpt box at the bottom of the post. Is there a different one for RankMath?

Rank Math doesn’t use wp_html_excpert() function. It uses it only in the meta description function.

If you are want to change the meta description then please use the following filter: https://rankmath.com/kb/filters-hooks-api-developer/#change-meta-description
