When you switch this to use a custom table you lose access to the easy integration with the Schema markup via the variables already available in the plugin.
With this implementation to get the data you need to create custom variables for each data point by modifying the following filter: https://rankmath.com/kb/filters-hooks-api-developer/#add-extra-variables
In the callback, you need to come up with a way to programmatically fetch the data from the new table where the ACF data is now saved.
Unfortunately, this custom implementation is outside the scope of our support so we cannot assist you further.
