%title% %sep% tegory%

I know that the subject line stands for Title – Category in the title tag. However, my SEO guy wants to grab location data of our clients in the database and he wants to create something like this as the page title wherever we set %jobLocation%:

%title% %sep% %jobLocation% %category%

So what I want to know is how I can add a function to the functions.php file in my child theme that will assign the client location to the %jobLocation% variable for use in the Rank Math title tags?
