Custom Canonicals: If you have set a custom canonical URL for any of your posts, that post will not appear in the sitemap. Rank Math includes only those posts that have a self-referencing canonical. You may want to check if any of your posts have custom canonicals set.

Plugin Conflicts: Sometimes, conflicts with other plugins can cause issues with the sitemap generation. We recommend checking for plugin conflicts using the Health Check plugin.

Robots.txt Restrictions: Ensure that your robots.txt file is not blocking any of your posts from being indexed. You can check this by going to Rank Math SEO → General Settings → robots.txt.

Caching Issues: If you are using caching plugins, they might be serving an outdated version of your sitemap. Clearing the cache could help resolve this.

In the meantime, please try to follow the steps below and see if that works for you.
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:

3. If the above steps don’t seem to work, kindly apply the following filter to your site.
add_filter( 'rank_math/sitemap/enable_caching', '__return_false');
