I see a lot of pages from old site appearing the Google Search Console that are no longer relevant or available as the new site replaced the old one.
Since they are showing up as a 404, is it best to assign it a 410 Content deleted or redirect them to the home page selecting the 301 Permanent Move option.

If there are relative pages on your new site, it is better to redirect them to those so their SEO values will be transferred to your new URLs.
However, if they are no longer existing, you can redirect them using 410 in the 404 monitor.
