Since you’ve already tried clearing the cache, updating permalinks, and deactivating and activating the plugin, we recommend checking if your sitemap is being cached by your server or any caching plugins you might be using.
Additionally, you can refer to this guide on excluding sitemaps from caching to ensure that your Video Sitemap is not being affected by caching issues.

Thank you for contacting us and sorry for any inconvenience that might have been caused due to that.
Please note that Rank Math only generates the video sitemap when it finds the video schema on your page/posts. If you don’t have any video schema on your website then please head over to your WordPress Dashboard > Rank Math > Titles & Meta > [Post Types] and make sure the Autodetect Video and the Autogenerate Image options are enabled.

After that, please navigate to WordPress Dashboard > Rank Math > Status & Tools > Database Tools and click the Generate button to generate the Video Schema for your existing posts and pages: https://rankmath.com/kb/rank-math-status-and-tools/#generate-video-schema-old-posts-pages

However, the Video sitemap is a PRO feature of the Rank Math plugin but the account you have used to open this ticket is the Rank Math free version.
