Assuming you are using the latest version of all the plugins, themes and WordPress (please update if not yet), it would seem like a conflict with one of the plugins or the theme you are using.

Only the site admin would know and your users won’t be affected by this troubleshooting.

I have gone into the full health troubleshooting mode, but still the settings do not appear when creating or editing a post. This was with all other plugins disabled.
All my themes, wordpress and plugins are fully up to date.

I accessed your site and only cleared site cache plus cloudfare. Rank math seems to be showing up on your posts perfectly now please check the screencast I have added in the sensitive section.
Please note that Rank math will show the SEO score in post lists only when a focus keyword is set and if the post is indexable
