You can add About and Mentions Schema to your product categories by adding a link to your text and enabling the about and mention option. Please note that the About and Mentions Schema is added as properties to the Article Schema, so the option would not be visible on your product categories.
However, you can edit the Article Schema with the Advanced Schema Generator and manually add the links for your about and mentions properties

The Product Schema does not support the About and Mentions properties. They can only be used for CreativeWork Schema types. Our plugin adds the CollectionPage Schema( a type of CreativeWork ) to all the categories by default. You can modify and use the following filter to add the About and Mentions property to it: https://rankmath.com/kb/filters-hooks-api-developer/#extend-json-ld-data

i think your mean about product, but product category not a product friend. i don’t think this is good to i use article or product schema in product category pages.
product category page only need to about and mention, without article or product schema.

The About and Mentions “Schema” are not standalone. They must be included as properties in the CreativeWork Schema types.
In your case, since Rank Math adds the CollectionPage Schema to all the categories by default, you will have to follow the directive shared by my colleague above to add About and Mentions properties to it.
