Thank you for contacting Rank Math today.
Please head over to your home page advanced tab of rank math meta box and make sure you have not modified the canonical URL. If you have, please remove it to allow Rank math to add this automatically.
If you also have a caching plugin, please add your sitemap URLs to the exclusion list, then re-save your permalink and sitemap settings. That should fix your issue.

It did have a modified canonical URL, which I have now deleted. I also then followed the other steps that you set out and unfortunately, the sitemap is still missing the homepage URL.
Do you have any other suggestions?

Since your home is a page you can find it in the sitemap_index.xml > page_sitemap.xml. There you will see the homepage added to the sitemap.
