Just to be sure, I checked it by myself in a local installation with only Rank Math. But I had no luck reproducing the issue, I got the right structured data for the events schema.
Assuming you are using the latest version of all the plugins and the themes (please update if not yet), it could be a conflict with one of the plugins or the theme you are using.
To determine that, please follow this troubleshooting guide:

Please let us know if you find the culprit.

The staging site doesn’t seem to have any posts added.
Some cities seem to missing a relative UTC time offset for their timezone. To resolve the issue, you can select another city with a timezone similar as yours or you can select the specific UTC time offset for the timezone settings. This has been known to resolve the issue.
