We’ve checked your sitemap, and it seems to be working fine.
For initial troubleshooting, please follow the steps to flush the sitemap cache:
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:

Once done, remove all your submitted sitemaps and resubmit your main sitemap only to your Google Search Console account:

I know the sitemap is working and I have confirmed that it is not being cached. But the problem is that it isn’t pinging Google when there is an update. I did try your troubleshooting steps anyway, but there were not problems or red flags.
Also, I’m not seeing where to remove an old sitemap from Search Console. For some reason, I don’t have that option in the little three dots next to each one.
One more thing: we’ve had problems with pages being discovered but currently not indexed. 8 out of the 9 pages are relatively new content. Could this be related to our sitemap problem?

You can remove your submitted sitemaps by clicking the three-dotted button above
Meanwhile, the Discovered – currently not indexed indicates Google has discovered the page, and even wants to crawl the page. But this was expected to cause an overload on the site, hence Google has rescheduled the crawl.
As a result, Google may delay this crawl for several days after it has been discovered, and the crawl status would remain empty until then.
