This issue could be occurred due to the cache of your website. If you’re using any caching plugin on your site, please follow this guideline to exclude the Sitemap files in your caching plugin: https://rankmath.com/kb/exclude-sitemaps-from-caching/
You can also try to add the following filter on your website to disable the transient cache for the sitemap:
add_filter( 'rank_math/sitemap/enable_caching', '__return_false');

Thank you for sharing that you do not have any caching plugin.
However can you please confirm if you have already added the following filter on your website to disable the transient cache for the sitemap:
add_filter( 'rank_math/sitemap/enable_caching', '__return_false');
If not yet add please add it and proceed with the steps suggested in this video screencast just once again this time prevent the same issue in the future:
