Thank you for contacting Rank Math and bringing your concern to our attention. I’m sorry for any inconvenience this issue may have caused you.
Unfortunately, the headings of the shortcode output can only be modified by making changes to the plugin files.
You will have to edit the wp-content\plugins\seo-by-rank-math\includes\modules\schema\class-snippet-shortcode.php file and change the H5 tag to H2 on line 299 to change the heading tag of the Schema output.
Please note that the changes will revert after each plugin update and you will have to make them again to get the desired output.
However, you can add them (schema data) manually to your posts/pages using your theme/page builder options. This will also save you time styling the shortcode using CSS to be user-friendly. Instead of adding the information using the shortcode, you can simply structure it as a normal article (using text widgets, headings, etc)
The point is that, all the content available for Google to see (schema data) should be visible to visitors as well.
